Chipotle Beef Burgers

If you are worried that the heat of the chipotles will be too much for some family members, you can reduce the amount in the recipe. Or make some of the burgers with a smaller amount of sauce and cut up the rest of the beef with more heat for those holding the burgers with a kick.
For even more heat, stir a little of the adobo chipotles in some mayo with a squeeze of lemon or lime juice, and you have a creamy, spicy burger topping (delicious on sandwiches too).

What you need?.
  • 2 pounds of beef (80/20%)
  • 2 tablespoons pureed chipotle in Adobo sauce (see Note)
  • ½ teaspoon of Kosher salt
  • ⅓ cup of ground onion
  • For the Flavors:
  • 2 tomatoes (sliced)
  • 1/2 cup onion (sliced)
  • 4 lettuce (large)
  • 2 tablespoons of mustard
  • 1/4 cup ketchup
How to make it.
In a large bowl, combine the beef, pureed chipotles in adobo, salt and onions. Hands are the best for this.

Shape the mixture into 4 patties, and use your thumbs to make a few loaves in the middle of each burger, which will make them flatten as they cook.

Heat the grill to medium-high. Roast the burgers on each side for 4 to 5 minutes, until done to your liking. Serve on the rolls (toasted if you like) with lettuce, tomatoes, onions or anything you like!
Note: To make puree chipotles in adobo, just buy a can of chipotles in adobo sauce, dip the whole thing in a food processor and puree. The sauce will be kept in a tightly covered container for at least 2 months.
